Maple Syrup
March is Maple Syrup time here in Ontario. As you probably have noticed the Canadian Flag emblem is a Maple Leaf and we do have a lot of these lovely trees. The Autumn is their glory with all the beautiful colours, but Spring is when they give us treats. Some people who have trees on their farms may tap them and hang buckets to gather sap. It has to be boiled down and becomes very concentrated. It takes a large amount to make a small bottle of the sugary syrup. Larger operations may have lines going from tree to tree and all the sap goes to a collection area to be boiled down to the proper consistency. I am not a professional so do not have the exact proportions. Some of these places have eating areas where crowds gather for pancakes, sausages, and of course Maple Syrup poured over. Many have tours that take people through the bush on horse drawn wagons to show them how the process happens. Another treat is candy made of Maple Syrup. I can taste it now.

My cousin purchased a booklet with recipies for detoxing the body. I have tried the sea salt rinse and love it a lot better than over the counter laxatives. I want to try the lemonade diet, one of the ingredients is maple syrup. The booklet decribes different grades; several extraction methods used; and how seasons determines the grade of maple syrup.
